Lyn’s Summer Recipe

This summer we hope you are growing your own garden. Remember, we eat to live, and not the other
way around. Grow your garden with intention, with live foods that feed the cells of your living body.

Tropical Cucumber Salad

  • 1-1/2 cups chopped cucumber
  • 2 medium tomatoes chopped
  • 1 mango peeled and chopped
  • 1/4 cup chopped cilantro
  • 2 Tbsp red onion chopped
  • 1 tsp finely minced ginger and garlic (optional)

Add Salt & Pepper to taste
Squeeze lime or 1/2 lemon to make at least 2 Tbsp juice
Chop ingredients into bite-sized pieces. Chop the mango into smaller chunks.
Finely chop red onion, and cilantro, and finely mince the ginger.
Place all ingredients together into a bowl
 

In a measuring cup mix lime or lemon, ginger, S & P, and red onion.
Pour over the chopped mixture in the bowl.
 

Mix together and serve.
Other ingredients to suit your taste: seasonal fruits or berries, cooked black beans, lentils and corn.
